When its only open for two days until sell out, the pastry chef is serving East coast southern food. From Buttermilk-marinated fried chicken to haricot vert with heirloom tomatoes with smoked peach puree, hazelnut, and arugula. This is not your typical everyday food truck.

The star of the show is the shiner bock beer-battered Monte Cristo with pit-smoked ham and mesquite-smoked turkey, cheddar and provolone cheese, and a homemade cherry and fig jelly. Not much is served, but you don’t need much when it’s that good.

Starting in 2002 for the ACL, the owners of Hudson’s on the Bend created a festival-friendly candidate that’s inexpensive. It all began with fried chicken wrapped in a tortilla placed in a paper cone topped with mango-jalapeno slaw and ancho sauce. And the cone was born. Since the cone demand has increased the owner is now selling seven different types of cones, including the “Monster” which has chicken, shrimp and avocado in that signature corn flake breading.
